It always amazes how some people have so much trouble cooking rice. I have been to friends for dinner where they boil the rice then rinse it with boiling water from the kettle. It’s hard to hide the confused look on my face – “what on earth are they doing?”. Here is how to get perfect fluffy rice every time.

Take approx 1 cup of white basmati rice per person – Basmati is the preferred rice, but American long grain works almost as well.
Place in a saucepan and wash 2-3 times with clean cold water. Simply fill the pan with water, swirl it around with your hand, let the rice settle then pour off the water. This removes some of the starch making the rice less sticky when cooked.
Once washed add enough water to cover the rice by about 1cm. Bring to boil and continue to boil until peaks start to form. Cover the pan and switch off the heat.
Leave for approx 20 -30 minutes until all the water is absorbed. Do not remove the lid during this time.

If using brown basmati rice add an extra ½cm of water so the rice boils for slightly longer.
