Potatoes with whole spices

4-5 medium potatoes – peeled and cut into 2cm dice
sunflower oil – about 2 tablespoons
3 teaspoons panchpooran
1 teaspoon ground turmeric
1 teaspoon ground cumin
pinch cayenne pepper
1 teaspoon salt
1 dried chili – optional

Heat the oil over a medium heat in a large frying pan. When hot add the chili and the panchpooran. Once the spices start to sizzle, add the potatoes and stir to coat the potatoes with the spices. Now add the rest of the ingredients, stir well and cook for about 30-40 minutes until the potatoes are tender.

      Next time I make it I’ll take a picture. In the meantime, imagine potatoes covered in whole spices tinged with a hint of yellow from the turmeric.
