OK so you don’t normally need a recipe to make cheese on toast, but this one is a little different made with a harissa and garlic butter, with added spinach to make it feel slightly less unhealthy
Go for some good quality bread, a sourdough, seeded loaf or a rye bread all work well
I haven’t added salt as the miso and cheese should provide enough to bring out the flavours, but feel free to add a little if you feel it needs it
75g softened butter
1 tablespoon rose harissa
1 teaspoon miso
2 cloves garlic – crushed
½ teaspoon ground cumin
¼ teaspoon ground cinammon
¼ teaspoon chili powder
5g fresh coriander – finely chopped
250g spinach
100g grated mozarella
4 slices good bread – I used a seeded sourdough
Mix the first eight ingredients in a medium bowl until everything is evenly combined Wilt the spinach. If using a bag of washed spinach, open the bag and place in a microwave for 2 1/2 minutes, else wash the spinach, place in a saucepan with a lid, cover and heat gently until the spinach has wilted Drain the spinach in a seive and press out as much liquid as you can, roughly chop, then add to the butter along with the grated mozarella Toast the bread either in a toaster or on both sides under the grill, then divide the topping equally between the four slices and place under the grill until bubbling and starting to brown
