I’ve never liked bananas and I don’t have a sweet tooth but oddly I like this! The bananas should be very very ripe.
85g butter – softened
170g caster sugar
2 medium eggs
225g self raising flour
¼ teaspoon bicarbonate of soda
450g mashed bananas
100g walnut pieces
Heat oven to 180C. Mix butter and sugar until smooth. Slowly add eggs and beat together. Now add the flour and bicarbonate of soda, a little at a time. When well mixed add the mashed banana and the walnuts. mix again, place into a lined loaf tin and bake for about 1¼ hours. Test after an hour by poking a clean skewer into the middle. The loaf is done when the skewer comes out clean.
Serve thick, warm buttered slices.
