Asparagus with Chili

Serves 2-3 as a side dish

1 bunch asparagus – snap off the tough ends
large glug olive oil
1 dried red chili
salt and pepper
optional: crumbled feta cheese for a Middle Eastern twist
grated parmesan cheese for an Italian twist

Take a large, heavy bottomed frying pan. Place over a medium to high heat, then add the oil. Put the chili in a fry for 5 seconds. turn over and fry for 5 more seconds. Now add the asparagus and fry, turning occasionally till it starts to char a little. Add salt and pepper to taste. Serve as it is or topped with a little cheese if desired.

    After frying the chili do you remove it or leave it in the pan.

      Leave it in. Remove before serving
