So simple, so delicious, and very little washing up, and not a lot of cooking
To serve two people
2 Nans (shop bought is fine)
4-6 tablespoons natural yogurt
2 tablespoons tandoori masala
a pinch of salt
150g spinach – wilted and roughly chopped
120g paneer – cubed
½ red onion – finely sliced
1 teaspoon whole cumin seeds
2 teaspoons garam masala
1 red chili – finely sliced
Put the oven onto 200C
Place the nan onto a baking sheet. Mix the yogurt and tandoori masala and spread evenly over each of the nan.
Sprinkle a little salt over, then add the spinach. If your using bagged, prewashed spinach, just open the top of the bag and microwave for 90 seconds to wilt it.
Divide the cubed paneer evenly between the two nan, then the red onion slices and red chili.
Sprinkle the cumin seeds and garam masala over them, then pop into the oven for around 15-20 minutes until the paneer starts to char at the edges.
Serve with a little mango chutney.
