Smoked Tofu and Avocado Brunch

Serves 4

1 tablespoon light olive oil
225g smoked tofu. I used the Tofoo one but any smoked tofu will do – cut into into bite sized cubes
8 or so ripe cherry tomatoes – halved
8 or so mushrooms – diced the same size as the tofu
2 ripe avocados
Juice from 1 lime
8 slices of good sourdough bread
Turkish (or other) chili flakes

Put a large frying pan over a high heat. Add the oil. When hot, add the tofu, tomatoes and mushrooms.
Toss from time to time, but keep the heat high. Fry for about 10-12 minutes until the tofu starts to brown.

Meanwhile remove the stone and skin from the avocado. Put the flesh in a bowl with the lime juice and a little salt. Mash with a fork until fairly smooth but retaining some texture.

Pop the sourdough slices in the toaster.

To serve, put a spoonful of avocado onto each slice of toast. Then divide the tofu, mushroom and tomatoes between each plate. Sprinkle a few chili flakes over and serve.
