
I made these simply with potatoes, onions and spices. You could add peas of finely chopped spinach for something a little more colourful.
1 onion – chopped
3 medium potatoes – finely diced
large handful fresh coriander – roughly chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon ground turmeric
½ teaspoon cayenne pepper or chili powder
2 teaspoons amchoor
½ teaspoon anardana
about 1 cup of gram flour
a little water
sunflower oil for deep frying
Place everything except the water into a large mixing bowl. Mix well then add very small amounts of water and mix until all the vegetables are held together by a thick paste.
Heat the oil in a large pan or wok. When hot drop in about a tablespoon of the mixture at a time and fry until golden. Drain on kitchen paper and serve hot with pickles, chutneys and natural yogurt.
