Very simple, delicious middle eastern bean stew type dish.

1×400g tin Ful Medames (Fava beans). Make sure you buy the plain beans not the tins with spices already added.
3 cloves garlic – chopped
6-7 tablespoons olive oil
2 teaspoons ground cumin
2 teaspoons paprika powder
2 ripe tomatoes – finely chopped
large bunch flat leaf parsley – roughly chopped
juice of half a lemon
Heat 3-4 tablespoons of the oil, then add the garlic and fry for a few seconds. Before the garlic starts to brown, drain the beans and add to the garlic and oil. Add 1 teaspoon of cumin and 1 of paprika. Cover the beans with water and bring to the boil.
Simmer for about 10 minutes then use a potato masher to roughly mash the beans. Now add the remianing cumin, paprika, oil an dthe lemon juice. Stir and continue to simmer.
Transfer to a bowl, cover with the chopped tomatoes, a little salt if desired and finish off with a handful of chopped parsley.
